Might sound cliche but there are flavors that are so good and so complex that remain engrained in you brain till the day you die. For me was Mole Oaxaqueño.  
Puebla’s mole is internationally known, and while the mole poblano is exceptionally good I view it as the “pretty boy” of the mole family. The mole oaxaqueño tastes more like a flavor that modern man can’t achieve, it feels almost like going back in time into prehispanic mexico. Every time I have Mole from the city of Oaxaca I feel an utter respect for indegenous people who carry all these tradition and make the most “human” dish I have had. 
Going around the marcados of Oaxaca to buy mole is a delight, mole as black as mud but has an amazing array of flavors: sweet, spicy, rich… and if you add the flavors of a good chicken or in this case a tamal.. the moisture of them marries perfectly with the mole. 
If you guys are from Oaxaca or are planning to go soon I have a couple of nice words for you: LUCKY BASTARDS! 

I knew subscribing to this tumblr would end in regret. So many mole-covered nums, and I want them all.
